  • Opinel knives optimized for work with comfortable handle and easy sharpening

    If you look at the knives any butcher, fish monger, etc. uses they all share the same features: comfortable handle, good slicing geometry, good enough edge retention, and easy to sharpen. The opinel really shines when being put through ALOT of work, the near instant touch up yielding a good deal of sharp cutting time is a better ratio of sharpening:work than many modern steels.

    French here: I know many old french people who had their opinel for the most part of their life, still razor-sharp. You know it's old when the blade is curved on the inside due to years of sharpening. i own one for many years, it cut my finger to the bone once, but I still love that little bastard. I have a large Sebenza for day-to-day life, because of the auto-lock and being a sucker for titanium, but hands down Opinel is the best pocket knife ever, incredibly cheap/tough/useful.

  • Opinel paring knife recommended as part of a budget kitchen setup with Victorinox

    In terms of Opinel for other knives, I'm not sure as this is the only one I've used. The victorinox fibrox and modern look pretty solid and I know there were some reviews for that recently. If you're looking for just a set of knives to get you started, a Victorinox Modern Chef knife and an Opinel paring will probably do quite well.
