Product Insights
The Parallel N° 118 Multipurpose Chef's Knife is an affordable German-style chef's knife using X50CrMoV15 stainless steel at 56–57 HRC, offering easy maintenance through edge rolling that sharpens on basic stones and a curved belly ideal for rock chopping. However, its edge retention is adequate only for weekly home use and trails Japanese steels, while factory sharpness varies between units and the varnished beech handle requires hand washing despite dishwasher-safe blade.
Verified claims
- Hardness
- Hardness of 56–57 HRC matches Wüsthof and Zwilling targets.
- Edge retention
- Edge retention adequate for weekly home use; lags Japanese steels like VG-10.
- Maintenance
- Easy to maintain: edge rolls not chips—honing realigns, and it sharpens on basic stones.
- Quality consistency
- Factory sharpness varies: some units arrive razor-sharp, others dull.
- Sharpening
- Full edge sharpens on basic stones; steel rolls rather than chips.
- Rock chopping
- Curved belly and high tip suit rock chopping, offering affordable alternative to pricier models.
- Push cutting
- The curved belly that aids rock chopping can make push cutting less comfortable.
- Steel
- Uses X50CrMoV15 stainless steel, 56–57 HRC, same as premium German brands.
- Factory sharpness
- Buyers report that factory sharpness varies — some units are razor sharp, others dull.
- Edge sharpness
- Factory sharpness varies between units; bolster-free design eases full-edge honing.
- Dishwasher safety
- Blade tolerates dishwasher cycles, but hand washing is recommended for the handle.
- Edge toughness
- Edge rolls instead of chipping when hitting bone; realigns with a honing rod.
- Blade shape
- Pronounced belly and high tip mirror German chef's knives for rock chopping herbs.
- Handling and technique
- Rock-chopping belly and ~150g weight reduce fatigue; symmetrical grind suits both hands.
- Value
- Affordable starter chef knife with a proven alloy, but factory edge varies and handle needs hand-washing.
- Handle care
- Hand wash, dry immediately, and store in a dry place to preserve the varnished beech handle.

User discusses the Opinel Parallele chef knife's performance and value
My first chef knife was an Opinel Parallele. I enjoyed it before moving onto some higher end knives. It sharpens easily enough and holds an edge fairly well. I really appreciate the minimal bolster on the Parallele when it comes to sharpening. I still reach for it when I'm mincing herbs as I like rock chopping herbs. This new range from Opinel looks beautiful for sure. If I enjoyed knives with this much belly, I'd definitely consider the Opinel a solid option that's a lot more affordable than a Euroline Kramer or a Florentine F4. Though I wish Opinel made more of their kitchen knives with Carbon steel as an option.

User praises the Parallele santoku and paring as razor sharp with good edge retention
I have the Parallele santoku and paring, and both were razor sharp out of the box. I touch them up periodically and they've been great. The steel holds an edge really well. I'm no chef, but they've been way better than the wedding set I've been using for 15 years lol.
