    I have held one. The steel is nothing impressive. Looks like a factory vg 10. You can buy just those blades for 90CAD. So it shows you how much he charges for the handles…a lot. But. His maple burl handles are gorgeous. Truly lovely. The walnut are nothing to write home about however. They are a little on the heavy side. And are of a skinnier grip. So if you prefer a skinnier grip and a burl handle then I think they are nice.

  • First-hand review: Hazaki gyuto's walnut handle came unfinished, needs maintenance; overall good but not the best value

    The Hazaki pro bunka was my first knife as the gyutos I viewed in store seemed comically large. One week later, I was walking back in for a 240 Gyuto, somewhat regretting my bunka purchase. Don’t get me wrong, it’s been great, and I reach for it pretty regularly, but the versatility of a Gyuto is far superior. The handle on the Hazaki’s are beautiful but quite thin and would suit someone with smaller hands. I’m not sure about the maple, but the walnut came unfinished, so I would highly recommend protecting it with some cutting board wax. VG-10 is great. Sure, there’s better steel out there but it’s going to perform very well, hold and edge and require minimal maintenance. I was happy to support a Canadian company and would love to recommend the same but it comes down to what will suit your needs best.
